Breakfast Cups * Eggs, Turkey, & Whatever Else You Like!

These saved my mornings.

Normally, I have a Greek yogurt at the start of every day. I especially liked Chobani's Simply 100 or Oikos Triple Zero. Before that, I was an avid Aldi Greek yogurt fan, but the first 2 had less ingredients, which I liked.

Lately, though, I wanted to switch it up. After losing 34 pounds in the past 3 years, I've been maintaining my weight. I'd like to lose about 5 more pounds, but they just won't drop (of course).
"Maybe I should eat a different breakfast?" I thought.
Also, I am trying to get away from sugar as much as possible. It's a very bad addiction of mine, & starting off my day with that sugar hit may not be helping anything. Yes, Greek yogurt has less sugar than regular yogurt, but it was still a trigger for my sweet tooth to kick in each day.

Luckily, these babies came into my life.

I honestly didn't think they'd be that good. I mean, turkey in a muffin tin baked with eggs. Big whoop. But these are a game-changer. And by that, I mean a morning-changer.

Breakfast Cups
3 eggs
12 thin-sliced turkey slices (or ham, chicken, roast beef, etc.)
Whatever other ingredients you want to add with your eggs!  

I used onion flakes, basil, & shredded cheddar. Next time, I want to add minced onion instead of the dried onion flakes & continue using the cheddar cheese & basil. Diced green pepper would be an awesome addition, too!

Pre-heat your oven to 400 degrees. Grease 6 muffin tin spots. Layer your turkey (or other deli meat) in the muffin tin hole. This will act as a "cradle" for your eggs.
Here's the fun piece: you can either do a quiche-style egg like mine, or just crack the egg into the hole, like Oh Snap! Let's Eat!. I like my eggs scrambled, so that's why I chose my method. I cracked my eggs into a bowl, added the onion & basil, & whisked. Evenly, I poured the egg mix into the turkey cradles.
Over each breakfast cup, I sprinkled just a pinch of shredded cheddar cheese on top.
Even added some bacon bits!
Then, these get baked for 12-15 minutes. I kept mine in the oven for 15 minutes, cause I like mine crissssspy. 
Just how I like it: crisssspy!
Ta-da! Now you have a super healthy, super easy, protein-packed breakfast option! No more sugar-y yogurts or cereals or breads to start your day on the wrong mark. Start your day with these instead!
I brought these to work with me. I just re-heated them in the microwave for 30 seconds.
