Simple Beef Tacos

Life doesn't have to be so hard.

Tacos don't have to be difficult.

And some nights are made for taking it easy...

or getting chores done, like me.

Like washing my car that is covered in tree sap...

I spent 5 whole dollars going through the car wash, thinking "this will get rid of the sticky-ness!" Wrong. Time to grab a sponge and a bucket of soapy water and get down to business. Plus, a car never shines as bright like when it gets an old-fashioned, wash-by-hand, bath.
It's 65* out, and it's the end of October. This doesn't happen in Minnesota. 1 year ago today, we had snow on the ground and I was probably curling into my winter ball, despising the cold, wet, slippery, devil flakes falling from the sky. Winter is not my thing. Now Christmas! Christmas is my thing. I love the twinkle lights on everyone's house, and on my white, fake-but-beautiful tree. I've asked Jim if it was okay to put up the tree this early, and his response was "Whatever you like, babe." What a guy, huh? Of course, I won't be "that crazy lady" and put up my tree 2 holidays in advance. I'll wait, but not for much longer. Jim even offered to get me a real tree this year. I think I am going to take him up on that! It would be my first ever, and I'm sure I would love the smell...

Tacos, car-washing, weather, Christmas... it's amazing where my mind goes. Scatter-brain, much?

I don't really need to spell out a recipe for tacos. My advice: Keep them simple! Tacos should be savored the way they were made to be savored - with few ingredients. Here's how I make mine:

Simple Beef Tacos
You'll need:
1.25lbs ground beef
1 packet taco seasoning (someday I'll make my own taco seasoning...)
1 cup water
1/2 diced onion
diced tomatoes and/or salsa
shredded cheese
soft shells, or chips
a fork - this can get messy.

1. Brown beef in pan.
2. Add onion, taco seasoning, and 1 cup water. Mix.
3. Simmer for 10-15 minutes.

That is it, my friends.

Serve over soft tortilla shells or over chips. Jim likes soft shells, I like chips, you decide.
Top with tomatoes, salsa, cheese, lettuce, and whatever else suits your fancy. Some people like sour cream on their tacos, some like peppers - go crazy - find your perfect taco fixin's. 
Now that you have all this spare time on your hands, get a chore done. Like wash a car or something. Hey, mine needs washing... got a sponge?
