Kielbasa Stroganoff

Craving: Pasta

Meat thawed and available : Turkey Kielbasa

Result: Kielbasa Stroganoff

Conclusion: Mmmmm...

I was thinking for supper, to make beef stroganoff. Did I have beef thawed out? No. Was kielbasa on sale this weekend? Yes.

I like turkey kielbasa because it's a better choice for you, compared to beef sausage or beef kielbasa... or beef in general.

Never have I ever... made this recipe before. (Get it? "Never Have I Ever" is a drinking game... ya know... that one... yeah.)

I pulled this one out of a hat. I knew how to make beef stroganoff, so why not just subsitute the kielbasa in it's place? And that's what I did.

7 ounces Turkey Kielbasa (Half a "horseshoe")

4 handfulls dry elbow noodles

1 onion

olive oil

1 10.5 ounce can of cream of mushroom

1 cup plain Greek or regular yogurt

2 tablespoons parsley

Saute your chopped onion in the oilve oil.

Boil water for noodles, and add them once boiling.

Add chopped kielbasa to onion pan. Brown.

Add cream of mushroom can to meat pan. Simmer on low for about 10 minutes.

Add the yogurt. Mix well. Add the parsley, and mix again... well.

Drain the water from the noodles.

Serve meat mix over top cooked noodles as seen in photo.

It was good. It would have been better with company, but both Jim and Jack were pooped from the day, so they napped. Boys...
